Setton Pistachio of Terra Bella (Setton Pistachio) is a division of Setton International Foods that processes and packages more than 60 million pounds of pistachios each year. The company owns more than 6,000 acres of pistachio orchards throughout California and processes pistachios from orchards of private owners as well. Each year, the entire pistachio crop is harvested and processed during a six-week period beginning at the end of August and stored in silos for roasting and packaging throughout the year. "This is a fast- paced and high-pressure time for us because if the crop isn't harvested in a timely manner, it becomes lower quality and lower grade, which means it is worth less money," says Harris Lee Cohen, CIO of Setton Pistachio.
